The choice of planting 1600 olive trees was taken first of all for the natural vocation of the land to this crop (the company already existed and operated with 250 plants of which 50
centuries old) but also for the passion for the final product of cultivation: oil.
It is difficult to think of Tuscany, without its hills and its olive trees, without its bruschetta and its legume and cereal soups, without the “pappa al pomodoro” that with that “holy” oil turn
becomes the food like a king.
Il Martellino produces Extra Virgin Olive Oil from its selected olive trees (Tuscan qualities: Frantoio, Leccino, Moraiolo and Pendolino) transforming the olives harvested in November
partly by hand (from the old plants) at a nearby stone mill. ) and partly by mechanical means.
